Asahikawa is Hokkaido's second-largest city, set in a broad basin ringed by mountains in the middle of Japan's northernmost main island. It is known for bitterly cold winters, powdery snow, a much-loved zoo and a distinctive style of soy-sauce ramen. The area around Asahikawa Station and the Heiwa-dori pedestrian shopping street is the practical base, with easy access to buses, trains, restaurants and ramen shops. Biei and Furano offer farm stays, pensions and ski lodges surrounded by scenery, ideal if you are driving. Asahikawa's signature ramen uses a soy-sauce broth blended from pork and seafood stock, often topped with a thin layer of lard that keeps it hot through long winters. The noodles are firm and slightly wavy, and there is a ramen village on the edge of the city where several shops sit side by side.
Named after Genghis Khan, this Hokkaido favourite is grilled lamb and vegetables cooked on a domed iron skillet. It is hearty, smoky and best shared with friends.
A local speciality of Asahikawa, shinko-yaki is young chicken seasoned with salt and pepper and grilled until crisp. It is usually served in halves, and you tear the tender meat apart with your hands.
