Tomohon and the Minahasa highlands

Lake Tondano

Tinutuan

Also called bubur Manado, this is a rice porridge cooked with pumpkin, corn, cassava and plenty of leafy greens. It is the classic local breakfast, often served with salted fish, fried corn fritters and a spoon of chilli relish.

Cakalang fufu

Skipjack tuna is split, clamped on bamboo and smoked until firm. The smoked fish is then shredded and fried with chilli, shallots and lime leaves, and it appears on rice plates all over the city.

Chicken cooked in a fiery paste of red chillies, ginger, shallots and lemongrass. Minahasan cooking is known for its heat, and rica-rica is the dish that proves it.

Sambal dabu-dabu

A fresh, uncooked relish of chopped tomato, shallot, bird's-eye chilli and lime. It is served beside grilled fish and cuts through smoky flavours perfectly.
